Apulian taralli with hemp flour and hemp seeds

Michele's touch: soaked breadcrumbs

In all my savoury recipes I add a little soaked breadcrumb, the «Brösel» (German bakers call it an old-bread soaker). It makes the crumb softer, brings crust flavour and keeps the bread fresh longer. Optional: the recipe works without it, but I always do it.

Dry breadcrumbs

50 g

Water

150 g

for this recipe, with 1000 g of flour

  1. The day before: stir the breadcrumbs and water into a soft paste. Cover and keep it in the fridge overnight.
  2. The next day: add all the paste to the final dough (not to the preferment), with the other ingredients. The recipe's water stays the same.

Use plain breadcrumbs, with no salt or seasoning. Best of all is your own bread from yesterday, dried and grated.

Hemp Taralli

Farina tipo 00 85% + farina di canapa 15% · Proof: 28 min · Difficulty: Easy
Flour1000 g
Salt20 g
Dry white wine380 g
Extra virgin olive oil150 g
Hulled hemp seeds50 g
Ground black pepper5 g
Miglioratore Naturale Pro (3% on flour weight)30 g

Baking: 200°C · 28 min

Method

1) In a bowl combine 850 g of type 00 flour, 150 g of hemp flour, the salt (20 g), black pepper, the hemp seeds and the Miglioratore Naturale Pro. 2) Add 150 g of extra virgin olive oil and 380 g of dry white wine at room temperature. Knead 10-12 minutes into a smooth, firm dough: no water, the liquid comes from the wine. If it crumbles, add a spoonful of wine. 3) Cover and rest for 30 minutes. 4) Take 10-12 g pieces, roll them into ropes about 1 cm thick and close them into rings, overlapping the ends. 5) Bring a pot of water to the boil: drop the taralli in a few at a time and lift them out as soon as they float. 6) Let them dry for 1 hour on a clean cloth, then place them on a tray lined with baking paper. 7) Bake at 200 °C fan for 25-30 minutes, until golden and crunchy. Let them cool completely: in a tin they keep for 2-3 weeks.

The Apulian tarallo with 15% hemp flour and hemp seeds: more crumbly, with a nutty aroma. First boiled, then baked. Makes about 150 small taralli. Use only hemp flour and seeds sold as food. Recipe written by Sitor (AI) with Michele's method: a starting point to try.
